Beef


My father sent homegrown South Dakota beef back to school with me (cut and frozen, not on the hoof) when I returned from Thanksgiving. Since then I have been slowly whittling away at my meager store.

It is pleasant to have meat available. It makes cooking less expensive, and with some ground beef in the mix, I can make most anything. And frankly, I am a snob. Though our cooks really try, and we do get "steaks" every couple of weeks, I find them to be more akin to shoe leather in comparison to beef from home. I prefer my own hamburger to their steaks. That is the unhappy reality of living in a grain and dairy state.

So, now as I am drawing nearer and nearer the last of my beef, I think to myself, "Hmmmm . . . Just one more reason to look forward to Easter."

Yeah, it's me again. My father didn't want me to sell an old '66 Ford short-box pickup I had, so he offered to trade me for it. 6 half beeves, as they say -- good grass-grown longhorn -- which is a great trade when you have 4 children and a chest freezer. I know what you mean, Tyler -- it's a difference you can taste!

And the best part (in some sense, anyway) is that one day he's promised I'll get the pickup back -- something else to remember him by ...

Completely agree Tyler. As you can see from Jim's comment, we also don't like the the store bought stuff.

The greatest thing about Grampa Thorp and Grampa Dennis's beef is the fact that it is also healthy with high CLA so it very good for you. Especially the fat, which hold all the taste in beef. No wonder the lean nasty store bought beef has no taste hardly. Glad to see you love good beef. It's a Dennis family tradition.

I know what you're saying. My Mom grew up on a farm, and some of her family still farms, here in MN. So a couple times per year I get my own shipment of fresh beef from the family farm. Hamburger, roasts, and steaks. But mostly hamburger because it's cheap.

Yup...the stuff at the store can't compare.
